Аннотация: В статье приведены многолетние данные авторов и некоторые литературные источники особенностей формирования гидрохимического режима во временных водоёмах и влияния длительной эксплуатации осетровых прудов Азово-Донского района на их биологическую продуктивность. Изучено изменение показателей солевых ионов, перманганатной окисляемости, концентрации кислорода, темпа роста молоди осетровых рыб, эффективности использования ею пищи при выращивании в прудах одного года и семилетней их эксплуатации./Our own data and the data of other authors are presented where some specificities of hydrochemical regime formation in seasonal ponds of the Azovo-Donskoj region and the effect of long exploitation of these ponds on their biological productivity are considered. We have studied changes in such parameters as salt ions, permanganate oxidizability, oxygen concentration, growth rate, and feed efficiency of young sturgeon reared in ponds exploited during one and seven years.

Аннотация: Проанализированы литературные данные о зарубежном и отечественном опыте кормления молоди лососей. Приводятся рецепты и химические составы рационов, отмечены недостатки и достижения отечественного кормопроизводства. Особое внимание обращено на состояние лососёвого кормопроизводства на Дальнем Востоке. Эти сведения можно будет использовать при разработке и совершенствовании рецептур отечественных комбикормов для молоди тихоокеанских лососей./A review and analysis of literature sources on the foreign and home experience of feeding of juvenile salmons is made for the first time. Descriptions of recipes and of the chemical composition of diets are provided; achievements and shortages of the home foodstuff production are outlined. The state of the foodstuff production on the Far East has reviewed especially. The review can be helpful to work out or to make improvements of the recipes of the home foodstuff for juvenile Pacific Salmon.

Аннотация: The present environmental situation in the World Ocean is characterized by the diversity and unevenness of human impact on marine ecosystems and living resources. An alarming trait of this global picture is the concurrence of highly bioproductive areas with regions of the heaviest anthropogenic impact. The most of the offshore and coastal human activities is accompanied by pollution of marine environment. The probable decrease of the overall biological productivity in coastal ecosystems due to chronic pollution is about 10%, as compared with the optimum production in a "pure" World Ocean. Potential risk of ecological catastrophes at the regional level is associated mainly with oil spills, eutrophication of coastal waters, and invasion of alien species. Relatively new factors of large-scale anthropogenic impact include appearance of small particles of plastics in the open ocean and "noise pollution" of water masses. Up to now, the generally accepted methodology of quantitative assessment of anthropogenic impact on marine ecosystems and living resources does not exist.

Аннотация: The article shows the impact of glazing on the quality and safety of frozen salmon ovaries during the storage (for example, Oncorhynchus gorbuscha and Oncorhynchus keta). It was found that the water-glazed ovaries or 0,3% solution of i-aNa inhibits the hydrolytic and oxidative lipid processes that occur with greater intensity in the surface layers of frozen ovaries block. The results of studies on the content of non-protein compounds, fractional and amino acid composition of proteins, fatty acid composition of lipids, the aldehyde and malondialdehyde have allowed to give scientific credence of shelf life of frozen salmon ovaries to ensure the safety and quality during the 12 months of storage at minus 18 degrees C. Technical documentation of frozen salmon ovaries was developed and approved, it includes recommendations on technology of glazed frozen ovaries.
