Аннотация: Влияния ММ и СД исследуемых хитозанов на значения кm не было установлено, достаточно высокие значения кm свидетельствуют о небольшой специфичности папаина к хитозанам./It is specified that at carrying out a chitosan hydrolysis reaction by papain, in optimum conditions the reaction rate depends on chitosan deacetylation degree and does not depend on its molecular weight. Reduction of acetyl groups number in chitosan molecule results in decrease of the value of the maximal hydrolysis reaction rate.
