Аннотация: Приведены результаты исследований состава и величины рационов тихоокеанских лососей в центральной и западной частях зоны Субарктического фронта в феврале-апреле 2009 г. Отмечено, что в зимне-весенний период тихоокеанские лососи продолжают интенсивно питаться. Максимальные индексы наполнения желудков, в некоторых случаях до 600%, отмечены у горбуши. Избирательность лососей по отношению к таким кормовым объектам, как эвфаузииды, гиперииды и птероподы, и интенсивное питание свидетельствуют о достаточном обилии корма в районах зимнего нагула рыб./Food structure and diet of pacific salmons are investigated in the central and western parts of the Subarctic Front in February-April, 2009. The salmons fed actively, in particular the large-sized fish. Pink salmon had the maximum indices of stomach fullness, sometimes up to 600%. The salmons preferred euphausiids, hyperiids, and pteropods. High selectivity of salmons feeding and its high intensity indicate high abundance of forage organisms in their winter feeding grounds.

Аннотация: Оценена возможность использования метода капиллярного электрофореза для анализа свободных сульфатированных и несульфатированных дисахаридов в препаратах из хрящевой ткани гидробионтов, полученных методом ферментативного гидролиза. Установлено, что наибольшее количество свободных дисахаридов образуется при гидролизе хрящевой ткани гидробионтов ферментами, обладающими и протеолитической, и коллагенолитической активностью (комплексный ферментный препарат из гепатопанкреаса краба). Определено, что гидролизат из хрящевой ткани лососевых рыб кроме моно- и дисульфатированных дисахаридов хондроитинсульфата содержит трисульфатированные./Possibility of the capillary electrophoresis method application for analysis of free sulfated and unsulfated disaccharides in preparations from cartilage tissue of marine animals is evaluted. The most amount of free disaccharides is formed by selective hydrolysis of the cartilage tissue with the enzymes possessing both proteolytic and collagenolytic activity (as the enzyme complex from hepatopancreas of crabs). Using of enzymatic preparations with different substrate specifity provides different ratio of components with sulfated and unsulfated structure. The preparation from cartilage tissue of salmon, except of mono- and disulfated disaccharides, contains trisulfated disaccharides in the chondroitin sulfate. The hydrolyzate from squids tissue is distinguished by the highest content of the unsulfated disaccharides.

Current biotechnical norms for all major taxonomic groups of objects of restocking are reviewed. The possibilities of technological improvement to rise the viability at different stages are revealed. The measures to overcome the "weak points' and improving the quality of juveniles are proposed.

Аннотация: The article shows the impact of glazing on the quality and safety of frozen salmon ovaries during the storage (for example, Oncorhynchus gorbuscha and Oncorhynchus keta). It was found that the water-glazed ovaries or 0,3% solution of i-aNa inhibits the hydrolytic and oxidative lipid processes that occur with greater intensity in the surface layers of frozen ovaries block. The results of studies on the content of non-protein compounds, fractional and amino acid composition of proteins, fatty acid composition of lipids, the aldehyde and malondialdehyde have allowed to give scientific credence of shelf life of frozen salmon ovaries to ensure the safety and quality during the 12 months of storage at minus 18 degrees C. Technical documentation of frozen salmon ovaries was developed and approved, it includes recommendations on technology of glazed frozen ovaries.
